A wholesome, gluten-free teff porridge recipe- a creamy, and nourishing breakfast made with the ancient Ethiopian grain teff. Naturally gluten-free, high in protein, finished with a drizzle of cream and syrup, then crowned with almonds and ripe cherries.
Some mornings have a way of lingering in the heart long after the years have passed. For me, it was always the mornings when a pot of sorghum porridge (mabele or otherwise known as Makhaha in my language) bubbled gently on the stove, its steam rising like prayers into the air. Sorghum was the grain of my childhood, carrying me from sleepy dawns into days of play and discovery.
When I first tasted teff, it was as though memory and discovery collided. The tiny ancient grains, dark and speckled, transformed into a porridge that carried echoes of my childhood. Its nutty flavour and comforting creaminess felt both ancient and new, reminding me of mornings past while opening the door to something richer.
Teff did more than stir nostalgia, it surprised me with its depth. A grain so small, yet so powerful, brimming with nourishment and history. It felt like both a return and an awakening.
This teff porridge recipe is my way of holding those memories close while embracing the abundance of today. It is a bowl of comfort and a breakfast that feeds more than the body, it nourishes the soul.
What is Teff?
Teff is a tiny ancient grain that has been cultivated in Ethiopia and Eritrea for more than 5,000 years. Though small in size — one of the tiniest grains in the world—it is monumental in history and nutrition.
Traditionally, Ethiopians use teff to make injera, a spongy, slightly tangy sourdough flatbread that is central to their cuisine and culture. Teff is incredibly versatile. It can be transformed into everything from porridge to pancakes, and even beer.
Teff comes in different varieties: white teff with a mild flavour and lighter colour, brown teff with an earthy, nutty taste that’s perfect for porridge, and red or dark teff with a stronger flavour and higher mineral content.

Teff Porridge
Ingredients
- 1 cup teff whole
- 2 cups water plus more if needed for texture)
- 1 cup milk
- ⅛ tsp salt
- 1 tbsp maple syrup or honey or brown sugar, adjust to your taste
- ½ tsp cinnamon ground optional
Toppings (optional)
- ¼ cup almonds toasted, chopped
- ¼ cup cherries or blueberries, banana or mango
- 1 tbsp fresh cream dairy or vegan, optional
Instructions
- Rinse the teff seeds under cold water, until water runs clear.
- Combine teff, water, milk and a pinch of salt in a pot. Bring the mixture to a boil over medium-high heat. Once boiling, reduce heat.
- Cover and simmer for 20-30 minutes, stirring occasionally to preventburning, or until the grain softens to a porridge-like consistency.
- Stir in the maple syrup or honey and cinnamon. Adjust the sweetness and spice level to your liking.
- Remove the pot from heat and allow the porridge to stand for about 5 minutes.
- Serve warm and garnish with fruit & nuts (optional)

Notes
- CONSISTENCY – Stir the porridge regularly while it’s cooking to prevent it from sticking to the bottom of the pan. If you find that the porridge is too thick, you can add more water or milk to achieve your desired consistency.
- SERVING – Double the ingredients by using the 2x or 3x toggle on the ingredients section of the recipe to make it for more than 3 people.
