Bambara Beans Stew

An African-inspired Bambara beans stew prepared with pre-cooked Bambara beans, vegetables, and spices; Hearty, filling, and comforting!

Ingredients

  • 4 cups Bambara beans cooked
  • 1 onion diced
  • 3-6 cloves garlic peeled and minced
  • 2 bell peppers diced
  • 1 tbsp olive oil
  • 4 large tomatoes fresh
  • 1 tsp paprika
  • 1 tsp cumin seeds
  • 1 tsp chilli powder optional
  • 1 cube vegetable stock
  • 1 cup spinach fresh or frozen
  • 1 tin coconut milk

Instructions

  • In a large pot, heat the oil and add the chopped onion. Fry the onion for about 1-2 minutes, until it is softened. Add the garlic and seasonings, cook for a further 2–3 minutes then add the Bambara beans.
  • In a jug mix vegetable stock with warm 4 cups of water. Pour the broth in, add tomatoes, and peppers. Cover the pot and let the stew boil for 15 minutes.
  • Add the coconut milk and spinach, lower the heat, and let it simmer for an additional 5-10 minutes.
  • Serve in a bowl with rice or bread. enjoy!

Notes

SERVING
You can serve this stew with rice or with starchy vegetables like sweet potatoes.

Yes, this recipe makes a perfect gluten-free option. 
STORAGE -  HOW LONG DOES IT KEEP?
Let the stew cool down to room temperature before freezing it in an airtight container. Leave headspace in the container to allow for soup expansion. Date and label the container, then freeze for 3-6 months. When you're ready to eat the soup, thaw it in the fridge or a pot of cold water. Reheat to serve.
