Easy Vegan Chocolate hazelnut Granola | Gluten-free recipe

Ingredients

  • 1 cup hazelnuts chopped
  • 3 cups oatmeal
  • ¼ cup desiccated coconut unsweetened
  • 1 Tbsp chia seeds
  • 1 tsp sea salt
  • cup cocoa powder
  • ¼ cup coconut oil
  • ½ cup maple syrup
  • 1 tsp vanilla extract optional
  • ½ cup dairy-free chocolate optional

Instructions

  • Preheat the oven to 170° Celsius. In a food processor or large bowl, combine the hazelnuts, oats, desiccated coconut, chia seeds, salt, and cocoa powder. Blend or combine the ingredients several times.
  • In a small saucepan over medium-low heat, melt and combine the coconut oil and maple syrup.
  • Pour the liquid over the dry ingredients and thoroughly combine. The oats and nuts will be broken down more in a food processor, resulting in a finer texture.
  • Line a baking tray with parchment sheet, then pour and evenly spread the hazelnut granola mixture on it. Toast for 20-25 minutes (or until aromatic and deep golden brown), stirring halfway through.
  • Allow it to cool completely to room temperature before serving. Then, add the dark chocolate. Store it in an airtight container in a cool, dry place.

Notes

Allow the granola to completely cool before storing it; otherwise, it will become soggy.
