Ingredients

  • 5 carrots washed & chopped into chunks
  • 2 garlic cloves crushed
  • 2 cm ginger crushed
  • 1 onion diced
  • 1 tsp turmeric
  • 1 tsp chilli flakes
  • 1 tsp coriander powder
  • 4 cups vegetable stock
  • 1 tbsp fresh coriander

Instructions

  • In a medium pot, sauté the onions, garlic, and ginger until the onions are translucent.
  • Add the chopped carrots, turmeric, chilli flakes, and coriander powder. Sauté for a few minutes until the spices are fragrant.
  • Add the water and vegetable stock to the pot and bring to a boil.
  • Reduce the heat and let simmer for 20-25 minutes until the carrots are tender.
  • Using a blender or hand-held immersion blender, blend the soup until it is smooth.
  • Garnish with fresh coriander and serve hot. Enjoy!
