Roasted Potato Kale Breakfast Hash

I used potatoes as one of the main ingredients in this recipe. We all know that potatoes are less healthier than sweet potatoes. However, I have balanced the recipe out by including black beans and black kale. This dark green leafy vegetable contains more nutrients and antioxidants than green kale. I love it because it has a much richer and sweeter taste to it than most dark green leafy vegetables.

How to make this roasted potato kale breakfast hash
Ingredients
- 2 tbsp olive oil
- 6 medium baking potatoes
- 1/2 red pepper
- 1/2 red onion, diced
- 125g cherry tomatoes
- 1 can black beans, drained
- Black pepper
- 1tsp sea salt
- 1tsp garlic powder
Method
- Preheat the oven to 180℃, cut the potatoes and place them in an ovenproof dish and bake for 10 minutes.
- Remove from the oven and add diced onions, black beans, red pepper and tomatoes to the potatoes and sprinkle about 1/2 teaspoon black pepper. Return to the oven and back for another 10 minutes until the onions are soft and cooked.
- Remove from the oven and add the kale and chilli flakes. Return to the oven and cook for about 5 minutes until the kale is cooked.
- Serve along with avocado, hot sauce or salsa.
