Simple Carrot Soup
Equipment
- Large or medium pot
- Chopping board
- Knife
Ingredients
- 5 carrots washed & chopped into chunks
- 2 garlic cloves crushed
- 2 cm ginger crushed
- 1 onion diced
- 1 tsp turmeric
- 1 tsp chilli flakes
- 1 tsp coriander powder
- 4 cups vegetable stock
- 1 tbsp fresh coriander
Instructions
- In a medium pot, sauté the onions, garlic, and ginger until the onions are translucent.
- Add the chopped carrots, turmeric, chilli flakes, and coriander powder. Sauté for a few minutes until the spices are fragrant.
- Add the water and vegetable stock to the pot and bring to a boil.
- Reduce the heat and let simmer for 20-25 minutes until the carrots are tender.
- Using a blender or hand-held immersion blender, blend the soup until it is smooth.
