Blueberry chia Overnight Oatmeal
This Blueberry chia overnight oatmeal is ideal for busy mornings.
Blueberries are my number one when it comes to fruits. I love their midnight blue colour and more importantly I love their nutritional properties.
I first fell in love with blueberries at the university. This was after I became tired of eating junk and feeling sick all the time. I wanted a snack which was a healthier alternative and that is when I found these midnight beauties.
Oatmeal makes a healthy breakfast, thanks to its fibre content which helps you feel full and eat less later on during the day. For this reason alone, it is an excellent whole grain to add to your diet. Adding blueberries to oatmeal is a great combination, especially on this overnight recipe as it gives it a sweet satisfying taste.
Blueberries can be quite expensive, however, places like Aldi and the market sell them at an affordable price.

Ingredients
To make oatmeal:
- 250ml oatmeal
- 1 tsp chia seeds
- 250 almond milk
To make blueberry sauce:
- 1/2 cup fresh blueberries
- 1/2 cup water
- 1tbsp date syrup
- 1/2 tsp Vanilla extract (optional)
- 1 1/2 tbsp cornstarch dissolved in 3 tbsp of water
Method
- Add oatmeal to a jar or container, pour milk and chia seeds and mix, divide the mixture and place some into a separate container to add later.
- Place the blueberries in a small pan, cover with water, add date syrup, vanilla extract. Heat over medium to high health until it comes to a low boil.
- Add dissolved cornstarch into the blueberry mixture, turn the heat down and simmer for 3-4 minutes, you can add more water if the sauce is too thick.
- Remove sauce from the heat and leave to cool for 5minutes, then add onto the oatmeal mixture and refrigerate
- Wake up and enjoy!
