Golden turmeric-orange energy balls
Lately, I’ve been thinking a little more about what I eat; what I snack on. I’m am not going to lie, at the start of the pandemic, I felt overwhelmed with everything, that I started eating quite a lot of unhealthy foods and snacks. It felt so good but I soon realised that I was starting to feel tired too quickly during the day. So I thought to myself, what if I could make something that could satisfy my sweet cravings, increase my energy levels and boost my immune system all at the same time – and bang 💥😂 golden turmeric-orange energy balls!
If you would like to make these golden turmeric-orange energy balls, here’s the recipe:
Ingredients
- 75g of cashew nuts
- 1/2 oatmeal
- 1tsp turmeric powder
- 1tsp ginger powder
- 1/4 tsp ground black pepper (the active ingredient (piperine helps to absorb the curcumin compounds in turmeric)
- 1/3 cup of dried cranberries
- 1 medium orange squeezed
- 1 tsp coconut oil
Method
- Place all the dry ingredients in a food processor and blitz until they turn into a fine powder.
- Add a coconut oil and orange juice (you want to pour a small amount of the juice at a time while continuing to blitz to avoid the mixture getting too wet. You want the mixture to turn into a dough
- Once you are happy with the consistency of your dough
- Scoop a tablespoon at a time and use your hands to roll into a ball. Repeat until all the mixture has gone. Store in the fridge in an airtight container.
