Dairy-free chocolate oatmeal waffles
How about these dairy-free chocolate oatmeal waffles topped with ice cream?
These waffles are soft on the inside, but still slightly crispy on the outside and each bite is filled with blueberries and some plant-based ice cream.
If you have been following my posts for a while, then you’ll know that blueberries are my favourite. They are definitely a star ingredient for this recipe; they are naturally sweet, packed with antioxidants and serve as a great energy booster.
How to make these dairy-free oatmeal waffles
- 2 cups oatmeal
- Flax egg (2 tbsp of flaxseeds in 4 tbsp water)
- ½ cup blueberries, frozen or fresh
- 1tbsp coconut sugar
- 1 cup almond milk
- ¼ tsp vanilla extract
- 1 tbsp cacao powder
- 1/8 tsp sea salt
- 3 tbsp coconut oil
- 1 cup of water
Equipment
- Waffle maker
Method
- Add all of the dry ingredients to a bowl, mix them all together then gradually pour in the milk, flax egg and water, stirring as you go to work out the lumps.
- Stir until the mixture turns into a smooth batter. Leave to rest for 5-10 minutes until the mixture has thickened.
- Pour the batter onto the waffle maker and cook on medium heat until steam stops coming out of the side. (The waffle should have given a signal to take it out) as soon as it does remove them.
- Repeat until the batter is all used up.
- Enjoy!
