Mushroom Pasta with Cashew Cream Sauce

There’s just something satisfying about pasta. I mean I have never met anyone who doesn’t love it, it tastes so good, especially when it is cooked in a rich creamy sauce. It is comforting and delicious and that’s why we love it.
This cashew cream sauce has been around for some time now, and you will definitely find it on most plant-based platforms. I’ll be honest, I was a bit sceptical to try it because I didn’t think it was going to be as great as the good old creamy cheese pasta I used to make before I turned fully plant-based. However, I was wrong. This creamy cashew sauce is just as amazing and I love it even more because it is super healthy and so easy to make.
This mushroom and herb pasta with cashew cream sauce is also versatile, which means you can add any vegetables of your choice if you don’t want the mushrooms and it will still taste just as good.
When you do make it, make sure you soak the cashew nuts in water overnight so that the nuts can blend easily when making the sauce.
I used wholemeal tagliatelle pasta but you can use any pasta of your choice including gluten-free pasta. it is perfect for days when you want to treat yourself to something.

Ingredients
- 250g tagliatelle pasta
- 125g cashew nuts, soaked
- 80g mushrooms, sliced
- 3-4 cherry tomatoes, chopped
- 1 tbsp cornstarch (optional)
- 1/4 cup almond milk
- 2 garlic cloves, crushed
- 1/2 tsp Himalayan salt
- 1tsp chilli flakes (plus more for serving)
- 1 tsp mixed herbs
- Ground white pepper to taste
Equipment

Method
- Soak cashews in water for at least 1 hour or overnight. for best results. When ready to cook, drain and rinse the cashews with fresh water.
- Place the cashews in a blender or food processor, add 1/2 cup almond milk, salt, pepper and any spices you desire and blend until turned into a creamy sauce. You can also add fresh herbs like basil to add more flavour. Set the sauce aside.
- Cook pasta using the instructions of the packet, once cooked, drain pasta with cold water and set aside.
- Heat the oil n a large skillet over medium heat, saute the onions and garlic until soft and tender. Add the mushrooms and mixed herbs and cook until the mushrooms are slightly brown and well cooked.
- Lower the heat and stir in the pasta and the creamy sauce onto the skillet until well combined.
- Add in cherry tomatoes and mix together with the pasta. Add more pepper and salt if needed, then serve into a pasta bowl.
