Mushroom and Red Pepper on Toast, one of the simple quick lunch to make.
Mushrooms provide a wonderful taste, texture and some healthful properties.They contain minerals like calcium which is good for our bones. They are also a good source of vitamin D which controls the absorption of calcium to promote healthy bones and teeth in our bodies. The good news is that we don’t need to wait for the sun to come out, we just need to eat a lot of mushrooms. Yay!
Red bell pepper adds flavour into the mushrooms making it a delicious light meal to have. The bread can be substituted for pitta bread or wholemeal wraps.

How to make this mushroom & red pepper on toast.
Ingredients
- 2 slice wholemeal bread
- 1 cup mushrooms, sliced
- 1 red pepper, diced
- 3 cherry tomatoes, chopped
- 1tsp coriander chopped
- 1 tbsp chilli flakes
- 1/2 tsp black pepper
- 1 tsp of lemon
- 1tbsp olive oil
- A pinch of salt
Method
- Heat the oil in a skillet and fry the mushrooms for about 3 minutes, add the red pepper and mix together with the mushrooms.
- Add black pepper, chilli flakes, lemon and mix together and allow to cook for about 1 minute.
- Switch off the stove and add tomatoes and coriander.
- Drizzle olive oil on bread and place it in the toaster for about 1 minute.
- Remove from toaster and serve the bread with the mushrooms and red pepper mix.
