Orange Infused Couscous

Are you craving something light and flavoursome? Then this orange-infused couscous is for you. It’s ready in no time, fresh and easy to make. The raisins add in a slight sweetness to the dish which compliments the orange flavour in the couscous.

How to make orange-infused couscous
Ingredients
- 2 cup couscous
- 1 cube vegetable stock
- 2 cups boiling water
- 3 tbsp extra-virgin olive oil
- 1 green pepper, diced
- 3 Spring onions, sliced
- 2-3 oranges, squeezed
- 1 tsp turmeric
- 1 tsp mixed spice
- 1/2 cup raisins
- 3 tablespoons lemon juice
- 1 teaspoon ground ginger
- 2 tablespoons fruit chutney
- Ground black pepper, to taste
METHOD
- Place the couscous, raisins in a container, add 2 cups of hot water and close the container for about 4-5 minutes or until the couscous has absorbed the water. The couscous should be fluffy and double the amount.
- In a saucepan, heat the oil over medium heat, add the peppers, onions and cook for about 3 minutes, add lemon, orange juice, chutney, ginger and mix until well combined. Add the couscous and mix until well combined. Remove from the heat and leave to cool down. You can garnish with coriander and black pepper.
- The salad can be served warm or cold. Allow at least 1-2 hours in the refrigerator for the flavours to meld.
