Here’s what you’ll need:
- Black beans: Black beans are one of my favourites, I absolutely love their midnight colour, if you can’t get a hold of black beans, you can use chickpeas, cowpeas or Bambara beans.
- Plantains: I used one plantain to make the burger and one for the topping.
- Garlic: To add flavour to the beans and the plantain.
- Onions: I used red onions for a sweet flavour to complement the plantain. You can also intensify the flavour by using spring onions.
- Rolled oats: to bind the mixture all together in order to avoid the mixture falling apart,
- Seasonings: Time to spice up the burger; I used chilli powder, smoked paprika, and cumin seeds. You can also use all-purpose seasonings or any seasonings of your choice.
- Chillies: I used a mild red chilli for a little bit of heat, however, you can go all out if you like it hot. You can use a scotch bonnet or any hot chilli to turn up the heat,
- Fresh herbs: I absolutely love coriander but you can use parsley or completely skip this part if you don’t have any fresh herbs.
- Lettuce: You can use leaf lettuce, romaine lettuce or spinach.
- Fresh tomatoes: I love beef tomatoes for my burgers.
- Vegan Mayo: To add moisture to the plantain bean burger
How to make the plantain burger
To make it, you simply mash together cooked black beans, mashed plantains, garlic, cumin, and salt. Then form the mixture into patties and cook in a skillet or on the grill. You can even top off the burger with some avocado and salsa for an extra kick. I like to make these in the summer for my meat-eating friends and they sure do love them all the time!

Plantain Bean Burger

Ingredients
To make patties:
- 2 canned black beans drained
- 2 yellow ripe plantains
- 3 cloves garlic minced
- ¼ red onion sliced and extras for topping
- 1 tbsp olive oil
- ¾ cup oatmeal
- 1 tsp cumin seeds
- 1 tsp chilli powder
- 1 tsp paprika
- 1 red chilli chopped
- 1 tbsp fresh coriander finely chopped
- 2 leaves Lettuce sliced
- ½ Beef tomato sliced
- 1 tbsp Vegan mayo
Instructions
- Preheat the oven to 180° Celsius. Peel one plantain, chop it into small chunks, and place it in a mixing bowl. Then stir in the black beans, oatmeal, onions, garlic, oil, and chilli until well combined. Using a potato masher, mash everything into a mushy texture.
- To make your patties, use a Burger Press kit. If you don't have one of these, scoop about 1/2 cup of the mixture into your hand and shape it into a round burger shape.
- Bake the patties for 25 minutes on a baking sheet. In the meantime, peel and cut the other plantain. Transfer to a baking sheet. Pour one tablespoon of vegetable oil over the plantain and coat it. Bake the plantains for 20 minutes in the oven.
- It's now time to assemble your burger. The brioche bun should be cut in half. Arrange the lettuce flat, then top with your patty, tomato slices, onion rings, baked plantains, salsa, vegan mayo, and more lettuce. Place the second half of the brioche bun on top. Enjoy!
