Savoury spinach waffles
Here’s a brilliant healthy brunch!
These savoury spinach waffles are the perfect swap for something sweet. They are light, crispy and easy to make. I’ve topped mine with guacamole and chestnut mushrooms, but feel free to use any vegetable topping fo your choice.
How to make these savoury spinach waffles
Ingredients
- 2 cups gluten-free oatmeal
- 2 cups almond or coconut milk
- 1/2 cup spinach, shredded
- Pinch of salt
- 1tbsp flax seeds
- 1tbsp apple cider vinegar
- 1/4 cup coconut oil
Equipment used
- Stand mixer
- Waffle maker
Method
- Combine all of the dry ingredients in a mixing bowl, mix them all together then gradually pour in the milk, stirring as you go to work out the lumps.
- Stir until the mixture turns into a smooth batter. Leave to rest for 5-10 minutes until the mixture has thickened.
- Spoon the batter onto the waffle maker and cook on medium heat until steam stops coming out of the side. Remove once your waffle maker prompts you to do so
- Repeat until the batter is all used up.
