Overnight strawberry oatmeal
It is a great feeling to wake up and know that breakfast is sorted, especially when it is overnight strawberry oatmeal, yum!
Fresh strawberries are packed with antioxidants as well as being a great source of Vitamin C. They contain minerals like manganese and potassium which are essential for our overall health. Oatmeal, on the other hand, has been known to be one of the healthiest breakfast meals to have. So, adding fruits like strawberries makes it taste heavenly. I know that winter is here, so the oatmeal can simply be heated up if it is too cold to have in the morning.
I also used chia seeds. I first discovered chia seeds at university during my early days of searching for healthy foods. I read about the benefits and I never looked back. They are high in omega 3 fatty acids which are known to lower the undesirable fats in our blood that can potentially cause conditions like stroke or heart disease. They are also high in minerals like calcium and magnesium which promote healthy teeth and bones.

Ingredients
- 1/2 cup oatmeal
- 1 cup almond milk
- 1 tsp flax seeds
- 1 tsp chia seeds
- 4-5 medium strawberries
- 1/2 tsp coconut flakes (optional)
- 1 tsp of raspberry jam
- 2 tbsp of plant-based yoghurt (soy/coconut)
- 1 Jar or container
Method
- Place your oatmeal with flaxseeds, chia seeds in a jar and pour in the milk
- Cut your strawberries in a bowl and add a teaspoon of jam.
- Add the strawberries into the jar of oatmeal to achieve a layer.
- Layer the plant-based yoghurt (I used coconut milk)
- Repeat the process and sprinkle coconut on top of the layered oats (optional)
- Refrigerate overnight and enjoy in the morning.
