Super simple dairy-free pancakes
These super-simple dairy-free pancakes are a perfect way to start your day. They are made of hearty oat flour, flaxseeds, almond milk etc. A good drizzle of syrup and freshly cooked fruit make this breakfast recipe simple and delicious!
I was sitting down the other day thinking about the recipes I have for you on here. It was when I realised that I don’t have a super simple dairy-free pancake recipe. So here it is and I hope you enjoy it!
I love waking up early on weekends to make breakfast for everyone in my house. One thing that I know they appreciate is dairy-free pancakes and waffles. Also, I can now confidently say this because I have managed to convince them that that dairy-free pancakes are better than normal and they agree.
I hope you enjoy this recipe as much as I did.
Here’s how to make these super simple dairy-free pancakes
Ingredients
- 2 cups of oats
- 1 cup of water
- 2 cups almond milk
- 1/2 wholemeal flour (optional),
- 1tbsp flax seeds
- 1 tbsp coconut sugar or agave syrup
- 1 tbsp apple cider vinegar
- 3 tbsp melted coconut oil and extra for cooking.
Topping
- 1tsp coconut oil
- 2 nectarines
- Cinnamon
- Agave syrup
Method
- Heat your pancake pan or skillet while you get the batter
- In a medium bowl, combine oatmeal, flaxseeds, and coconut sugar. Add apple cider vinegar, almond milk, coconut oil and mix until the ingredients are well combined.
- On a skillet or pancake pan, pour the batter to make desired size pancakes. Allow cooking until bubbles form all around the edges. Flip and cook for another 2-3 minutes. Serve immediately with your desired topping.
For nectarine topping
- Heat coconut oil over medium heat in a small pot. Add the nectarines and cook for about a 2-3 minutes and then sprinkle over the cinnamon and turn the heat off. Serve with pancakes when ready.
