Easy Eggy Bread served with Strawberries & Raspberries

Ingredients

  • 8 slices brioche or white bread
  • 1 cup egg substitute e.g Crack's vegan egg or 1 egg
  • ½ cup coconut milk almond, soy, or oat milk work well
  • 1 tsp vanilla extract
  • ½ tsp cinnamon ground
  • Pinch sea salt or coconut oil
  • 1 tbsp vegan butter
  • ¼ cup strawberries fresh
  • ¼ cup raspberries fresh
  • 1 tbsp Maple syrup or golden syrup for serving

Instructions

  • In a large mixing bowl, whisk together the Crack's vegan egg substitute, coconut milk, vanilla extract, ground cinnamon, and a pinch of salt until well combined.
  • Heat a skillet or griddle over medium heat.
  • Dip each slice of bread into the vegan egg mixture, ensuring both sides are well coated but not overly soaked.
  • In a skillet, melt the butter over medium heat. Place the coated bread slices on the heated skillet or griddle and cook until golden brown on both sides, approximately 3-4 minutes per side.
  • Once the French toast is cooked, transfer it to a serving plate.
  • Top the French toast with a generous amount of fresh strawberries and raspberries berries. Drizzle with maple syrup just before serving.
  • Serve immediately and enjoy your delicious ultimate breakfast: French toast with fresh berries. Feel free to sprinkle powdered sugar, add a dollop of vegan whipped cream, or even a dash of cinnamon on top. Enjoy!

Notes

Prep tip: To keep the French toast warm while preparing the remaining slices, you can place the cooked ones on a baking sheet in a preheated oven at 200°F (93°C).
Bread alternative: If brioche bread is not available, you can use white bread of your choice. However, keep in mind that brioche adds a unique buttery flavour and richness to the dish.
Storage: French toast is best enjoyed fresh. However, if you have leftovers, you can store them in an airtight container in the refrigerator for up to two days. Reheat the slices in a toaster or warm them in the oven before serving.
