Fresh peach Salsa

Peach Salsa is a light and refreshing side dish or sauce with onions, jalapenos, and coriander. This take on the standard tomato salsa. it has a delicious richness thanks to the peaches. It's perfect for summer barbecues or creating colourful sweet-savoury recipes.

Ingredients

  • 3 peaches
  • ½ red onion
  • 1 Jalapeño
  • 1 lemon squeezed
  • 1 cm ginger
  • 1 tbsp coriander

Instructions

  • Wash and dice peaches and onions into small cubes. Roughly chop the jalapeños and coriander. In a large bowl, combine the peaches, onions, jalapeños, then grate in your ginger, add lemon juice and coriander.
  • Mix all the ingredients together. Transfer the salsa into a jar and refrigerate, it should keep for 7 days. Serve with tortilla chips, tacos or burgers. Enjoy!
