Fresh peach Salsa

- 3 peaches
- ½ red onion
- 1 Jalapeño
- 1 lemon squeezed
- 1 cm ginger
- 1 tbsp coriander
Wash and dice peaches and onions into small cubes. Roughly chop the jalapeños and coriander. In a large bowl, combine the peaches, onions, jalapeños, then grate in your ginger, add lemon juice and coriander.
Mix all the ingredients together. Transfer the salsa into a jar and refrigerate, it should keep for 7 days. Serve with tortilla chips, tacos or burgers. Enjoy!
