Oat Kidney bean burgers

These oatmeal kidney bean burger patties are delicious, juicy, and full of flavour. They're made with a combination of red kidney beans, oatmeal, and a variety of spices and seasonings. They can be served on a bun with all your favourite toppings added to a salad for a healthy-ish and satisfying meal.

Ingredients

  • 1 red onion medium: finely chopped
  • 2 cloves garlic crushed
  • 1 carrot medium: grated
  • 1 red pepper medium: diced
  • 1 tbsp cajun seasoning
  • 1 tsp chilli powder mild
  • 1 tsp cumin seeds
  • 1 tin kidney beans can: drained
  • 1 tbsp soy sauce
  • 1 tbsp tomato puree
  • ½ cup oatmeal
  • 2 tbsp olive oil

Instructions

  • Preheat your oven to 190°C (375°F).
  • In a large mixing bowl, combine the finely chopped red onion, crushed garlic, grated carrot, diced red pepper, cajun seasoning, mild chili powder, and cumin seeds. Mix well.
  • Add the drained and rinsed kidney beans, soy sauce, and tomato puree to the mixing bowl. Mash everything together with a fork or potato masher until the mixture is well combined but still slightly chunky.
  • Add the oatmeal to the mixing bowl and stir until everything is well combined.
  • Divide the mixture into 4-6 equal parts and shape each part into a patty using a burger press or your hands.
  • Place the patties on a baking sheet lined with parchment paper and brush each patty with olive oil.
  • Bake the burgers in the preheated oven for 25-30 minutes, flipping them halfway through.

Notes

No burger press? If you don't have a burger press, you can use your hands to shape the patties, but a press will make the process much easier. 
Consistency: If the mixture is too wet, add more oatmeal. If it's too dry, add a little water.
Seasoning: If you don't have cajun seasoning, you can use a mixture of paprika, garlic powder, onion powder, and cayenne pepper instead.
Storage: These burgers can be stored in the fridge for up to 3 days. To reheat, simply pan-fry or grill until heated through.
Serving suggestions: Serve with your favourite burger toppings, such as lettuce, tomato, avocado, and cheese.
Make it Gluten-free: To make these burgers gluten-free, use gluten-free oatmeal and check that your cajun seasoning and soy sauce are also gluten-free.
