Servings: 1 person
- ¼ cup raspberries fresh or frozen
- ¼ cup pomegranate juice
- 1 tbsp honey or simple syrup optional, to taste
- 1 tbsp lemon juice
- ster Rosemary fresh, to garnish
- 1 cup ginger ale or sparkling drink of choice ( tonic water or sparkling water)
- Strawberry and Mint Ice cubes optional
- Garnish: extra raspberries, sprig of mint
Make the raspberry puree: In a cocktail shaker, muddle the fresh raspberries with mint leaves and honey (if using). Muddling releases their juices and creates a rich raspberry puree
Add pomegranate juice and lemon juice to the shaker and stir to combine.
Use a fine strainer to pour the mixture into a glass filled with ice. This step ensures your berry mocktail is smooth, with no pulp or seeds.
Add your choice of sparkling drink (ginger ale, tonic, or soda).
Add your choice of sparkling drink (ginger ale, tonic, or soda).
You can add more fresh raspberries or pomegranate seeds for a burst of color and extra flavor (optional).
Serve and enjoy your refreshing Raspberry Mocktail drink with Strawberry Mint Ice!
Cocktail Mixer Alternative: If you don’t have a cocktail shaker or mixer at home, don’t worry. You can use a clean jar with a tight lid to muddle and mix the ingredients. Or simply muddle the raspberries and mint in a bowl with a fork and stir everything together in a pitcher.
Mixer Tip (Very Important!): If you do decide to use a sparkling drink like ginger ale, tonic, or soda water, do NOT seal your cocktail shaker or jar with the lid. The bubbles will build up pressure and it will pop open and trust me, you’ll have juice everywhere. Instead, just stir gently with a spoon before pouring into your glass.
Sweetness: Prefer your drink sweeter? Add a touch more honey or simple syrup. Want it more tart? Use a splash more lemon juice. This mocktail is very forgiving and easy to adjust to your personal taste.
Parties & Gatherings: To make this mocktail in bulk for a party or gathering, simply multiply the ingredients by the number of servings needed. You can prepare the raspberry-pomegranate mixture in advance (including the muddled raspberries, mint, juice, and sweetener) and store it in the fridge. When ready to serve, just add ice, top with your sparkling drink of choice, and garnish.
