Singapore (Mei fun) rice noodles

Equipment

Ingredients

  • 225 g vermicelli noodles also known as rice noodle/ mei fun
  • 2 tbsp soy sauce light or reduced-salt
  • 1 tbsp rice wine
  • 1 tsp curry powder
  • 60 ml sesame oil
  • 1 shallot sliced
  • 4 garlic cloves crushed
  • 80 g chestnut mushrooms sliced (or shiitake mushrooms)
  • ½ red pepper sliced into long pieces
  • ½ green pepper sliced into long pieces

Instructions

  • Start by soaking the brown vermicelli or rice noodles in a bowl of hot water for about 5 minutes or until they become soft and pliable. Once they are ready, drain the noodles. Drain noodles in a colander and and set them aside
  • In a small bowl, combine the soy sauce, rice wine and curry powder. Mix well until all the ingredients are mixed together.
  • Heat the sesame oil in a large wok or frying pan over medium-high heat. Add the shallot and garlic, stirring constantly until they become fragrant and slightly golden. Next, add the sliced mushrooms and peppers, and continue to stir-fry for another 3-4 minutes or until the vegetables are tender-crisp.
  • Once the vegetables are cooked, add the drained noodles to the wok or frying pan. Pour the sauce over the noodles and toss everything together until the noodles are evenly coated with the sauce. Continue to stir-fry for another 2-3 minutes or until the noodles are heated through.
  • Serve your Singapore rice noodles hot, garnished with fresh spring onions. Enjoy!

Notes

  • Storage: Singapore Mei Fun is best enjoyed fresh, but if you have leftovers, you can store them in an airtight container in the refrigerator for up to 2 days. Reheat gently in a pan or microwave before serving.
  • Cooking Tips: To prevent the noodles from sticking together, rinse them under cold water after draining. Be sure to have all your ingredients prepped and ready before starting the cooking process to ensure a smooth and efficient stir-fry.
