Ingredients

  • 3 tbsp chia seeds
  • 1 cup coconut milk
  • 1 teaspoon vanilla extract
  • 2 tbsp maple syrup
  • ¼ cup strawberries (fresh)for topping

Instructions

  • In a bowl, combine the chia seeds, coconut milk, vanilla extract, and maple syrup. Give it a good stir until everything is well combined. Let the mixture sit for around 5 minutes, and then give it another stir to prevent the chia seeds from clumping together.
  • Cover the bowl with cling film and refrigerate overnight or for at least 4 hours to allow the chia seeds to absorb the liquid and create a pudding-like consistency.
  • Once the chia pudding has set, give it a good stir to break up any clumps that may have formed. Divide the pudding into serving glasses or bowls and top them off with fresh strawberries. Once your strawberry chia pudding is beautifully presented, it's time to indulge in its creamy goodness.

Notes

Storage: Store the leftover chia pudding in an airtight container in the refrigerator for up to five days. Please give it a good stir before serving to ensure a consistent texture.
Serving: The recipe yields approximately four servings, but you can easily double or halve the ingredients to suit your needs.
Best for: meal prep, quick meals, a healthy snack.
