Vegan Stir-fry noodles with broccoli

These vegan stir-fry noodles are loaded with vegetables, an ideal healthy & quick meal

Ingredients

  • 250 g wholewheat noodles
  • 1 red and green pepper chopped into long pieces
  • 1 cup chopped cabbage
  • 60 ml sesame oil
  • 1 red onion sliced
  • 1 green and red chill
  • 1 cup beansprouts
  • 2 tbsp reduced-salt soy sauce
  • 200 g tender stem broccoli

Instructions

  • Place the noodles in boiling water, remove from the heat and leave to soak for 6-7 minutes.
  • Meanwhile, heat oil in a wok or frying pan and bring to high heat. Add the vegetables and stir fry for 3-4 minutes, stirring continuously.
  • Drain and refresh by running the noodles underwater.
  • Add the noodles and stir-fry for about 1 minute. Add soy sauce and toss until the noodles are evenly combined.
  • Transfer to a serving bowl of your choice.
  • Enjoy!
