Vegan Stir-fry noodles with broccoli
These vegan stir-fry noodles are loaded with vegetables, an ideal healthy & quick meal

- 250 g wholewheat noodles
- 1 red and green pepper chopped into long pieces
- 1 cup chopped cabbage
- 60 ml sesame oil
- 1 red onion sliced
- 1 green and red chill
- 1 cup beansprouts
- 2 tbsp reduced-salt soy sauce
- 200 g tender stem broccoli
Place the noodles in boiling water, remove from the heat and leave to soak for 6-7 minutes.
Meanwhile, heat oil in a wok or frying pan and bring to high heat. Add the vegetables and stir fry for 3-4 minutes, stirring continuously.
Drain and refresh by running the noodles underwater.
Add the noodles and stir-fry for about 1 minute. Add soy sauce and toss until the noodles are evenly combined.
Transfer to a serving bowl of your choice.
