Healthy Lentil vegetable Pie
This healthy lentil vegetable pie is the plant-based version of comfort food.
I absolutely love lentils, simply because they are so easy to prepare compared to other types of dried beans. They are so easy to cook and packed with protein and other health benefits. They also easily absorb flavour from various spices and herbs which is fantastic. Lentils are also inexpensive to buy, they are readily available to buy tinned or dried. So you can easily make this healthy vegetable lentil pie which is just as delicious and will definitely leave you fuller for longer.
How to cook dried lentils
Rinse lentils in a pot with fresh water and add half a litre of water. Bring to boil, reduce the heat and simmer until the lentil is tender. Cooking time varies from 15-30 minutes depending on the type of lentils purchased. However, make sure that they are soft when pressed against two fingers.
If you don’t have the time to cook from dried, you can purchase tinned lentils from most supermarkets.
How to prepare sweet potato topping.
- Peel the sweet potatoes cut them into large chunks and place them in a medium pot.
- Add about 2 cups of water and cook under medium heat until they are soft and tender.
- Add water or almond water, if needed. You can also add a little bit of salt, black pepper and dairy-free spread to make the mash softer.
How to make this Healthy lentil vegetable pie
Ingredients
- 2 cups cooked lentils, brown or green
- 2 large sweet potatoes, cooked and mashed (500g)
- Red, yellow and green pepper, chopped in chunks
- 60ml olive oil
- 1 small onion, diced
- Spring onion, chopped
- 2cm of fresh ginger
- 2cm fresh or powdered turmeric and 3 cloves of garlic, minced
- 60ml water
- 1 tsp of cumin seeds
- 1 tsp of coriander spice
- Fresh coriander, to garnish (optional)
- 1/4 tsp chilli powder
- 4 cloves garlic ( minced)
- 1/8 tsp salt
Method
- Preheat the oven to 180ºC/350ºF/Gas Mark 4.
- Heat the oil in a large pan and cook the onion for about a minute, add garlic, turmeric and ginger and cook for another 3-5 minutes. Stir occasionally until softened but not browned.
- Stir in the peppers, add all the seasonings and cook for another 3-5 minutes, until the peppers are soft
- Add the lentils and mix together with the peppers, until well combined. If the lentils are too dry, add a bit of water. Add fresh coriander and simmer for about 10minutes.
- Transfer the lentils into an ovenproof pie dish. Spread the sweet potato mash until the lentil is evenly covered. Place in the oven and bake for 30 minutes, until the topping is nicely browned. Enjoy!
