Singapore Mei Fun, I didn’t even know what they were until I started getting a Chinese takeaway regularly during my sixth-form high school years. Those were the days of long hours of study, tests and assignments. Ah, there’s nothing quite like a well-deserved treat after all that hard work. So, every chance I got, I would happily make my way up the road to my favourite Chinese shop.
One day, I felt the need to do something different. The usual egg-fried rice or vegetable chow mein just wouldn’t cut it. I needed a change. So, with my stomach in search of something new and an adventurous spirit, I made my way to the counter and asked for a recommendation.
The chef, with a mischievous grin, leaned forward and whispered, “Have you ever tried Singapore Mei Fun? A vermicelli rice noodles with a twist”.
I was taken aback. Singapore mei fun? What were they? How had I missed them all this time? But I couldn’t let my ignorance get the best of me, so I nodded eagerly and said, “Sure, why not? Surprise me!”
With a twinkle in his eye, the chef got to work. He mixed the ingredients with the precision of a master craftsman, adding a medley of colourful vegetables, and soy sauce, and then came the curry sauce. The vibrant colours and enticing aroma instantly transported me to a colourful dish from my culture.

Singapore (Mei fun) rice noodles
Equipment
- 1 Wok Large
- 1 Knife
- 1 Chopping board
- 1 Strainer or Colander
Ingredients
- 225 g vermicelli noodles also known as rice noodle/ mei fun
- 2 tbsp soy sauce light or reduced-salt
- 1 tbsp rice wine
- 1 tsp curry powder
- 60 ml sesame oil
- 1 shallot sliced
- 4 garlic cloves crushed
- 80 g chestnut mushrooms sliced (or shiitake mushrooms)
- ½ red pepper sliced into long pieces
- ½ green pepper sliced into long pieces
Instructions
- Start by soaking the brown vermicelli or rice noodles in a bowl of hot water for about 5 minutes or until they become soft and pliable. Once they are ready, drain the noodles. Drain noodles in a colander and and set them aside
- In a small bowl, combine the soy sauce, rice wine and curry powder. Mix well until all the ingredients are mixed together.
- Heat the sesame oil in a large wok or frying pan over medium-high heat. Add the shallot and garlic, stirring constantly until they become fragrant and slightly golden. Next, add the sliced mushrooms and peppers, and continue to stir-fry for another 3-4 minutes or until the vegetables are tender-crisp.
- Once the vegetables are cooked, add the drained noodles to the wok or frying pan. Pour the sauce over the noodles and toss everything together until the noodles are evenly coated with the sauce. Continue to stir-fry for another 2-3 minutes or until the noodles are heated through.
- Serve your Singapore rice noodles hot, garnished with fresh spring onions. Enjoy!

- Storage: Singapore Mei Fun is best enjoyed fresh, but if you have leftovers, you can store them in an airtight container in the refrigerator for up to 2 days. Reheat gently in a pan or microwave before serving.
- Cooking Tips: To prevent the noodles from sticking together, rinse them under cold water after draining. Be sure to have all your ingredients prepped and ready before starting the cooking process to ensure a smooth and efficient stir-fry.
Hi, your recipe calls for 60 ml of sesame oil, but the recipe calls for it twice; once in the sauce and once for cooking the vegetables. Is the 60 ml to be divided between the two? I can just guesstimate for the vegetables, but not sure how much to put in the sauce and I sure don’t want to ruin it by adding too much! Thanks!
