Lemon Blueberry Crumb Cake Recipe (Moist and Crunchy for Days)
This lemon blueberry crumb cake recipe is soft, moist, and topped with a crunchy lemon crumble. Made with fresh lemon zest and juicy blueberries, this moist lemon blueberry cake stays tender for days and is delicious served with a cup of tea.
There is something dangerous about going to the market when fruit is in season.
You tell yourself you’re only looking. Then you see the strawberries. The peaches, the cherries or the blueberries.
Before you know it, you’re carrying home far more than you planned. That is how I found myself standing in my kitchen with three kilograms of fresh blueberries.
At the market, it felt like a perfectly sensible decision. They were in season, sweet enough to eat by the handful, and far cheaper than the tiny supermarket punnets that disappear after two breakfasts. The vendor kept filling the bag and I kept nodding.
Only later, when I unpacked them at home, did I realise just how many blueberries three kilograms actually is.
For the next few days, blueberries found their way into almost everything. I scattered them over yogurt, stirred them into porridge and ate them straight from the fridge whenever I walked past. I shared them with visitors. I sent some home with family.

And still, there were blueberries.
That is one of the things I love about seasonal ingredients. They arrive all at once and ask something of us. They invite us to slow down, pay attention and get creative.
This lemon blueberry crumb cake recipe was one of those moments of creativity.
Not because I needed another cake recipe. There are already plenty of blueberry cake recipes in the world. But because there is something deeply satisfying about turning an abundance of fruit into something worth gathering around.
A cake has a way of bringing people to the table.
You cut a slice for yourself and somehow somebody else appears in the kitchen. One slice becomes two. A conversation starts. Someone asks for the recipe. Someone else asks if they can take a piece home.
Food has always done that.

This lemon blueberry crumb cake combines two ingredients that seem made for each other: blueberries and lemon. The blueberries bring sweetness and bursts of juice in every bite, while lemon zest adds a bright citrus note that lifts the entire cake.
Then there is the crumb topping.
Golden, buttery and crunchy, it bakes into a sweet crumbly layer that contrasts beautifully with the soft cake underneath. It is the sort of topping that leaves little crumbs on the plate and makes people reach for another slice before they have finished the first.
The funny thing is that five of my recipe testers told me they don’t usually like lemon desserts.
All of them loved this cake.
Maybe it’s because the lemon doesn’t shout. There is no sharp lemon juice glaze or overpowering citrus flavour here. Just the fragrance of lemon zest woven through the batter, making the blueberries taste even more like themselves.
By the third day, the cake was still moist. The crumb topping was still crisp. Every slice was as enjoyable as the first.
This might be my favourite kind of recipe.
The kind that doesn’t need cream or custard. The kind that sits quietly on the counter waiting for tea time. The kind people cut small slices of because they’re “just having a taste” and then return for another piece ten minutes later.
If you’ve come home from the market with more blueberries than you know what to do with, this lemon blueberry crumb cake recipe is a good place to start.
One of the things I appreciate about this cake is that it relies on ingredients many of us already have in our kitchens.

Why You’ll Love This Lemon Blueberry Crumb Cake
There is a reason some recipes become regulars while others are made once and quietly forgotten.
This blueberry lemon crumble cake belongs in the first category.
The cake is soft and moist, with juicy blueberries tucked into every slice. Lemon zest brings brightness without overpowering the fruit, while the buttery crumble topping bakes into a golden layer that adds just the right amount of crunch.
It is simple enough for an ordinary afternoon yet special enough to place in the centre of a table when friends come over.
Perhaps my favourite thing about it is how well it keeps. Three days after baking, the cake was still moist, the crumb topping was still crisp, and every slice disappeared just as quickly as it did on the first day.

Serving Suggestions
This cake was designed to stand on its own.
When I shared it with testers, every single person enjoyed it without cream, custard or icing. The combination of moist cake, sweet blueberries and crunchy crumble topping felt complete.
That said, it is lovely alongside a cup of tea or coffee.
For a more indulgent dessert, serve it with whipped cream, greek yoghurt or a simple lemon glaze made from powdered sugar and lemon juice.
How to Store Lemon Blueberry Crumb Cake
Store the cake in an airtight container at room temperature for up to three days.
One of the things that surprised me during testing was how well it kept. The cake remained moist and tender, while the crumble topping stayed pleasantly crisp.

Final Thoughts on this lemon blueberry crumb cake
Perhaps that is one of the quiet gifts of seasonal food.
It arrives all at once.
A basket overflowing with strawberries. A neighbour with too many courgettes. A market stall piled high with peaches. Three kilograms of blueberries that seemed like a perfectly reasonable purchase until you carried them home.
Seasonal ingredients have a way of interrupting our routines. They ask us to pay attention. To cook differently. To make room for what is available right now, knowing it won’t be here forever.
This lemon blueberry crumb cake was born from that kind of abundance.
Not from a carefully planned recipe list or a special occasion, but from a kitchen full of blueberries and the simple desire to make something worth sharing.
That is why I love it so much.
Because at its heart, it isn’t really about blueberries or lemon zest or a crunchy crumble topping.
It’s about what happens when we take an ordinary ingredient and give it our attention. It’s about inviting someone over for tea. It’s about cutting a second slice when you weren’t planning to. It’s about leaving a cake on the counter and noticing how people keep returning for “just a little piece.”
The recipes that stay with us are rarely the most complicated. They are the ones tied to a season, a conversation, a market visit, or a moment in time we didn’t know we would remember.
So if you happen to find yourself with more blueberries than you know what to do with, I hope you make this lemon blueberry crumb cake.
And I hope, somewhere between zesting the lemons, scattering the blueberries and brushing the crumbs from the table afterwards, you create a memory of your own.
