Vegan stir-fry noodles with broccoli

Lately, this meal has become a staple in my house. I work late hours at times and I don’t always have the time to prepare lengthy meals. So, vegan stirfry noodles are always there to save the day 😅

How to make vegan stir-fry noodles
Ingredients
- 250g wholewheat noodles
- 1 red and green pepper, chopped into long pieces
- 1 cup chopped cabbage
- 60ml sesame oil
- 1 red onion, sliced
- 1 green and red chill
- 1 cup beansprouts
- 2 tbsp reduced-salt soy sauce
- 200g tender stem broccoli
Method
- Place the noodles in boiling water, remove from the heat and leave to soak for 6-7 minutes.
- Meanwhile, heat oil in a wok or frying pan and bring to high heat. Add the vegetables and stir fry for 3-4 minutes, stirring continuously.
- Drain and refresh by running the noodles underwater.
- Add the noodles and stir-fry for about 1 minute. Add soy sauce and toss until the noodles are evenly combined.
- Transfer to a serving bowl of your choice.
- Enjoy!
