A Raspberry Mocktail Drink (reminds me of new discoveries)
Growing up in a small town in South Africa, I never knew what a raspberry looked like, let alone a pomegranate. These bright, jewel-like fruits seemed like something from a fairy tale, or perhaps a glossy Western cookbook. They never appeared at our local market, nor did I spot them in any of my worn, hand-me-down storybooks.
It wasn’t until my late teens, after moving to the UK, that I encountered raspberries for the very first time. One day, in my GCSE catering class, our teacher asked us to bring fresh raspberries for a meringue dish. With a curious heart, I wandered the supermarket aisles, this was uncharted territory for me. And there, in a little plastic punnet, were these ruby-red berries that seemed too delicate, too luxurious for my student life.
I’ll never forget that first bite: sweet yet tangy, just like my favourite sour sweets from home. A burst of joy on my tongue. Healthier than sweets, of course but for a student on a tight budget, still an occasional luxury.
Back then, I couldn’t imagine sipping on something as refreshing as this raspberry mocktail drink. During my university years, every penny was precious. Fresh berries felt extravagant. But life has a beautiful way of surprising us. Now, as an adult, I allow myself these little pleasures; a bowl of fresh raspberries here, a homemade raspberry mocktail drink there especially on hot summer days when a cool delicious drink is all you crave.
A Delicious Drink That’s Good for You
Raspberries are more than just a delicious treat. They are packed with antioxidants, fibre, vitamin C, and manganese, all while being low in sugar. A handful of fresh or frozen raspberries can support heart health, boost your immune system, and even fight inflammation.
Each time I make this berry mocktail, I know I’m creating a delicious drink that not only cools me down but also nourishes my body.

Tips for Making the Best Raspberry Mocktail
- Sweetness: If you like your drinks sweeter, just add more honey or syrup. If you prefer tart, add a little extra lemon juice.
- Non-sparkling version: You can also make this with raspberry juice, apple juice, lime juice or simply enjoy it over ice with pomegranate juice alone.
- Herbal twist: Try adding chamomile tea or hibiscus tea for an extra soothing element.
- Cocktail shaker tip: If using a sparkling drink, do not shake the shaker closed—you’ll end up with a bubbly mess! Stir gently instead.

This non-alcoholic drink is one of my favourite easy mocktail recipes because it’s bright, refreshing, and so simple to make. It’s perfect for those of us who don’t drink alcohol but still want to enjoy a fun and festive drink. The combination of muddled raspberry, pomegranate juice, and citrus creates a vibrant, uplifting drink that delights with every sip.

Raspberry Mocktail Drink
Equipment
- Cocktail shaker
- Glass for serving
- Muddler or a spoon for mashing the raspberries and pomegranate seeds
- Sprig of fresh rosemary for garnish
Ingredients
- ¼ cup raspberries fresh or frozen
- ¼ cup pomegranate juice
- 1 tbsp honey or simple syrup optional, to taste
- 1 tbsp lemon juice
- ster Rosemary fresh, to garnish
- 1 cup ginger ale or sparkling drink of choice ( tonic water or sparkling water)
- Strawberry and Mint Ice cubes optional
- Garnish: extra raspberries, sprig of mint
Instructions
- Make the raspberry puree: In a cocktail shaker, muddle the fresh raspberries with mint leaves and honey (if using). Muddling releases their juices and creates a rich raspberry puree
- Add pomegranate juice and lemon juice to the shaker and stir to combine.
- Use a fine strainer to pour the mixture into a glass filled with ice. This step ensures your berry mocktail is smooth, with no pulp or seeds.
- Add your choice of sparkling drink (ginger ale, tonic, or soda).

- You can add more fresh raspberries or pomegranate seeds for a burst of color and extra flavor (optional).
