Oat Kidney bean burgers

- Fork or potato masher

Ingredients
- 1 red onion medium: finely chopped
- 2 cloves garlic crushed
- 1 carrot medium: grated
- 1 red pepper medium: diced
- 1 tbsp cajun seasoning
- 1 tsp chilli powder mild
- 1 tsp cumin seeds
- 1 tin kidney beans can: drained
- 1 tbsp soy sauce
- 1 tbsp tomato puree
- ½ cup oatmeal
- 2 tbsp olive oil
Instructions
- Preheat your oven to 190°C (375°F).
- In a large mixing bowl, combine the finely chopped red onion, crushed garlic, grated carrot, diced red pepper, cajun seasoning, mild chili powder, and cumin seeds. Mix well.
- Add the drained and rinsed kidney beans, soy sauce, and tomato puree to the mixing bowl. Mash everything together with a fork or potato masher until the mixture is well combined but still slightly chunky.
- Add the oatmeal to the mixing bowl and stir until everything is well combined.
- Divide the mixture into 4-6 equal parts and shape each part into a patty using a burger press or your hands.
- Place the patties on a baking sheet lined with parchment paper and brush each patty with olive oil.
- Bake the burgers in the preheated oven for 25-30 minutes, flipping them halfway through.
