Ingredients
5mediumripe tomatoesabout 500g, roughly chopped
½mediumwhite onionroughly chopped
1smallgarlic clove
1tspmango chutney
½Juice of fresh lime
small bunch fresh coriander
1tbsppickled jalapeños (I used jarred Santa Maria red jalapeños)
½tspfine sea saltor to taste (optional)
Freshly ground black pepperto taste (optional)
Optional
* ½ tsp ground cumin for a warmearthy flavour
Instructions
Add the tomatoes, onion, garlic, mango chutney, fresh coriander, lime juice, salt and pepper to a food processor.
Pulse until the ingredients are finely chopped but still have plenty of texture. Avoid blending until completely smooth.
Taste and adjust the seasoning with extra salt, pepper or lime juice if needed.
Transfer to a serving bowl and enjoy immediately, or chill for 20 minutes before serving to allow the flavours to develop.
Without a Food Processor
Finely chop all of the ingredients by hand, combine in a bowl and stir well. Enjoy!
Notes
Use ripe, seasonal tomatoes for the best flavour.
Use Roma or plum tomatoes produce a thicker salsa because they contain less water.
A squeeze of extra fresh lime just before serving brightens the flavour.
