Easy Fresh Tomato Salsa
Equipment
- * Food processor (or a sharp knife and chopping board)
- Chopping board
- Sharp knife
- * Citrus juicer (optional)
- Serving bowl
Ingredients
- 5 medium ripe tomatoes about 500g, roughly chopped
- ½ medium white onion roughly chopped
- 1 small garlic clove
- 1 tsp mango chutney
- ½ Juice of fresh lime
- small bunch fresh coriander
- 1 tbsp pickled jalapeños (I used jarred Santa Maria red jalapeños)
- ½ tsp fine sea salt or to taste (optional)
- Freshly ground black pepper to taste (optional)
Optional
- * ½ tsp ground cumin for a warm earthy flavour
Instructions
- Add the tomatoes, onion, garlic, mango chutney, fresh coriander, lime juice, salt and pepper to a food processor.
- Pulse until the ingredients are finely chopped but still have plenty of texture. Avoid blending until completely smooth.
- Taste and adjust the seasoning with extra salt, pepper or lime juice if needed.
- Transfer to a serving bowl and enjoy immediately, or chill for 20 minutes before serving to allow the flavours to develop.

- Finely chop all of the ingredients by hand, combine in a bowl and stir well. Enjoy!
